My personal favorite "basic" recipe":Muenster and Cheddar, bacon, and grilled onions on multi-grain bread. Use Land-o-Lakes Light Butter to grill (it spreads easier).

Personally, I think grilled cheese should have its own equivalent of the Reinheitsgebot. Bread, cheese, 1 spread, 1 additional ingredient. Anything beyond that is just a "hot sandwich."
