I'm pretty certain that even my 2 y/o daughter could ascertain that Cars was a movie about auto racing.  Granted, the cars were anthropomorphic, so I suppose one could make the argument that it was more analogous to long distance running than auto racing (since the cars aren't actually driving cars).  But my guess is that wasn't what you were getting at by putting auto racing in quotes, because, of course, there is no athletic element in auto racing.  Which is somewhat confusing because a) I thought we weren't making restrictions and b) Racing was one of the categories in the OP.

It's a moot point, anyway. "Talladega Nights" is the best auto racing movie.

Good call on rollerball. That movie ages pretty well all things considered. I feel like that will be remade at some point.

Cliff Robertson who kids know as Uncle Ben from Spiderman but was awesome in this and as Wing Commader Roy Grant in 633 Squadron.

Good plot and the Cup racing scenes are pretty spectacular.  Loosely based on Dennis Connors and the retaking of America's Cup after it was lost for the first time in 1983.

Gotta love Angus Lennie as Flying Officer Hoppy Hopkinson who pulled the Wing Commander out of the burning aircraft. Great movie.

As far as hockey goes "Slap Shot" with Paul Newman and the infamous Hansen brothers ha to be one of the best. It is the "Major League" of hockey.

There are no sailing movies better than Summer Rental or One Crazy Summer.

Summer catch is my favorite, god awful sports movie. Complete crap but still makes me laugh. BASEketball as well, but I don't think that's necessarily an awful movie.
