Why isn't this a Federal holiday??? I guess I have to change my dinner plans later.
Worth a reminder that if you don't appreciate a simple street taco with pork/chicken/beef and diced onion and cilantro, without a bunch of shredded cheese or sour cream, you don't actually love tacos.
Just finished the delicious pork quesadillas my wife made -- pork loin, sauteed peppers and onions, my homemade guac, a nice salsa.
Gonna have to be close enough to tacos.

I'm gonna.side with JWags here. He's 100% correct on the street taco (carnitas, carne asada) with onion and cilantro . It also must be on a soft corm tortilla with a splash of a hot salsa being optional.
While your quesadillas sound delicious, they are not tacos and may be illegal or at least a disqualification on National Taco Day.
I only eat American food

But is a taco a sandwich?
Supper tonight was blue tortilla chips, salsa, guacamole, pinto beans, cheddar cheese and taco flavored ground beef.
I had three carnitas tacos, some mex street 🌽, and a Negra Modelo.
What is the best Mexican beer? Maybe I should have gotten a Tecate.

Only if you're a heretic
I say it's a sandwich and only those with an unflinchingly orthodox definition of "sandwich" can say otherwise.
As the internet has so sagely determined, a hotdog is a sandwich. Therefore, a taco can be a sandwich as well.
Time and the evolution of language stop for no man. Get with the times.

I'm in an ingredient rebel and structure orthodox. I don't care what you put in it, but it has to be something between two separate pieces of the same thing. A hot dog is only a sandwich if you separate the bun.

I say it is not a sandwich due to the existence of Tortas, so its not as if its just the cultural version of a sandwich for a region. The same way I don't consider a gyro to be a sandwich.

Exactly. This is absurd. If a taco is a sandwich then why is there a distinction between breakfast tacos and breakfast sandwiches? You can't just make up definitions. And a wrap whether it's a pita or a tortilla isn't a sandwich either. I mean seriously if you fold NY pizza and eat it that way is it a sandwich?? Please.

Are the ingredients not between the sides of the tortilla? Are you eating your tacos lying open and flat with a knife and fork? Who's the heretic now?

Subway, cheesesteaks, and hot dogs are all forms of tacos unless you break the bun apart.
A quesadilla, if it's closed like a mexican quesadilla, is a calzone (much like poptarts). If it's open like american quesadillas then its a taco

Celebrated with a Fried Willapa Bay oyster, Salsa Veracruzana made with tomato, olives, capers, orange and guajillo on a hand-pressed squid ink tortilla taco
And grilled Amish chicken thighs en adobo, fresh fennel slaw, radish, pina-habanero salsa. Served with three hand rolled chicken fat flour tortillas
With a mezcal Paloma
Also a hot dog, taco, Italian beef, Philly cheese steak are all not sandwiches till the bread breaks.

Pierogies are of course part of the dumpling family and score quite well on the UDS (Ultimate Dumpling Scale). But there is a caveat because people mess with the classic potato/onion filling. It's also worth noting that dumpling ratings and competition is cut-throat and there are only a handful a people with expertise in dumplingology.
