Seeing these images convinces me that Marquette needs to ditch the Hillbilly theme now that the Clampetts are gone. BBQ was only because of Bert and Milwaukee isn't renowned for that style anyhow so they are stuck with Speed Queen. Now that a Polish guy is at the helm that fits perfectly with Milwaukee's culinary heritage. Hopefully, they'll get this right going forward.

Did you ever make the trek up 13th street late on a saturday night to the drive thru at Speed Queen?  It kind of reminds me of the scene in Blackhawk Down running through Mogodishu (sp) at night in a convoy of hummers.

Hell, chili, I never heard of the place until I read about it on Scoop yesterday. The only Q I ever had in Milwaukee was Saz' ribs and those weren't any good.

One of the basic precepts I learned in B School was to figure out what you are good at and stick to it. There are reasons why certain parts of this Republic excel at Q and Milwaukee lacks virtually all of those essential cultural ingredients.

One of my colleagues is a tab wearer who did a stint in The Mog. He said it was like living Mad Max every day.

It's been 30 years since I've been to Speed Queen.  Just the fact that they are open still is a testament.  Tough neighborhood.

Their chow tasted great at 2am after a belly full of RW&B.

Anything tasted good at 0200 with a belly full of RWB. Many people might not be aware but Tombstone Pizza was started in WI by a couple brothers who ran The Tombstone, a tavern located next to the town cemetery. Their first pies were made fresh and sold in their bar. They realized they had cracked the code on addressing an underserved market - hot food for the American drinking man.

This was a seminal moment in the storied history of Beer Drinking - no longer would a proud Wisconsinite be forced to make the unconscionable choice between slaking his thirst or satisfying his craving for hot grease. The men of The Tombstone were witness to greatness: The mystical union of Pabst, Pizza, and Propiation.  

They began selling their pizzas and small purpose built ovens through their original channel - taverns in the upper Midwest. One of the reasons they designed the crust like a slab of granite was for the reason it was being served in bars to drunks who were eating without plates.

This was part of a case study in B School. The prof asked us to define the success factors in their business model and someone pointed out that selling hot food to drunks in a bar allowed you to get away with many shortcomings. While humorous there is truth in that Tombstone developed an entirely new channel. And as they increased their distribution to new channels a key dimension of their strategy is that they exercised control by pioneering DSD. DSD gave them control over presentation, market support activities, and product mix by rooftop - intelligence that sharpened their offering and delivered double digit growth in a mature category.

Tombstone also differentiated by moving upstream in the supply chain to ensure better, more consistent quality. At a time when frozen pizzas were characterized by artificial cheese and mystery meats Tombstone trumpeted the fact they sourced real WI cheese and actually made their own meat toppings to "authentic Old World" standards.

The Tombstone Case Study is testament to the role of beer consumption in innovation, creativity, and brilliance. The Founding fathers of this great Republic had many differences but the one unifying fact is that they all made their own beer. America.

I read on Speed Queen's website they opened up in 1956 next to Milwaukee's then BBQ champ, "The Black King." They claim that they survived off of The Black King's overflow but as word spread of the Queen's superior taste and faster service they quickly supplanted The Black King as the new BBQ Royalty of Milwaukee. 50 years is a long time for a family owned enterprise but it could more attributable to a dearth of competition.
