They definitely do offer them but usually those classes are full of athletes and non traditional students looking to make up a lot of credits in not much time.  So you end up with long classes over not much time to cover the same amount of material as a normal semester.

The winter session pretty much covers the whole break, according to the academic calendar this year the winter term(aka Session 7) started on December 21st and runs through final exams on January 16th.  They don't really call it winterm like most places, usually something like extended fall.  If you look on the academic calendar, it's definitely on there along with several other things that are outside the "normal" schedule.

Gotta love the academic integrity of an institution that will make a (admittedly medical redshirting) scholarship basketball player miss a home game to be in a "winter break" class where attendance is required.    Every single badger argument about MU academics goes down in flames.
