Yes, Guac is great, but need some refried beans, black beans or pinto beans to go with it, salsa, grated cheese and of course chips.

Picked this up at Costco (of course its in a 20 pack). Not quite guacamole, but really good on toast with a sunny side up egg on top.

I hope you threw in some minced garlic.  That was an inexcusable oversight with my original recipe suggestion.  Anyhow, I hope it still turned out well.

I love great guac, and I'll even happily eat less-than-great guac like Wholly Guacamole in a pinch. Obviously I love guac with great chips -- one of my faves are Stacy's pita chips -- and of course with Mexican food. But I also love to use it as a mayo substitute on turkey sammiches or in tuna salad.

I too am a big fan of pita chips.  But I would suggest making a homemade Tzaziki as your dip which is also superb with veggies as well.  It's super simple:

Plain Greek Yogurt
Minced peeled cukes (with a bit of cucumber water)
Chopped Cukes peeled and seeded
Extra Virgin Olive Oil
Minced Garlic
Fresh Lemon juice
Fresh mint
Fresh dill
Salt and Pepper


You can look at recipes for portions but I basically am mostly concerned about the consistency.  You need a touch the cucumber water and olive oil to get it right.  I also like to have chunks of cucumber in addition to the minced cucumber.  It also lasts a while in the fridge.

I like pita chips with guac and also with mango salsa. But I'm not opposed to trying a Tzatziki dip.

Not guacamole related, but I bought 2 dozen hatch peppers mid-week to make some NM chili this weekend, and they all went bad.  Just sitting on the counter. Very disappointed.
