Tough to say.  There were the usual suspects like Donald Little and Reece Gaines, but for me the guys I hated the most were from Charlotte, Jobey Thomas and Che Guevera.  Not sure why, just really didn't like either of them.

Have to go with Adolph Rupp. A classless creep. Beating his ass at Madison during the NCAA's my freshman year still brings tears to my eyes. Later on I learned to hate Dwight Clay, the NCAA Tournament committee that gave Niorth Carolina State five games in the state of Carolina in 1974, the ref who threw Jerome Whitehead out of the Miami (Ohio) game in 1978, the morons who combined the Journalism and Speech schools so that each lost its identity, Bob Huggins, Donald Little, Reece Gaines, Jerry Smith and the Lopez twins.
