Not sure how Palermo's pizza is now but back in the day it was the best in Milwaukee. Peter Falluca was the founder's son and was graduated from Marquette. I knew him back then and if Pete was in the kitchen we got the world's greatest 'za. Pity if it went down hill because it was superb.

Still very good. Big supporters of Milwaukee and Marquette too.

Palermo Villa? It does not. Very disappointing, great pizza and pasta. I know they invested in the old brown bottle and that didn't go well...not sure if it put Palermo Villa under as well.

The frozen variety is not the greatest.

It's bullsh!t that the winning row has been in the lower bowl most of the season so far.  They used to be almost exclusively in the upper bowl.

I guess it isn't enough that the lower bowl already gets all of the t-shirts shot out of the cannon, all of the prizes floating down on parachutes, and all of the Kiss Cam appearances.

Having grown up in Asia I will say that the vast majority of the world's people squat rather than sit. Living in Hong Kong in the 90's there was a massive influx of Mainland Chinese looking to get out of the PRC through the British Colony prior to the handover in '97. The truest evidence of the Mainland Chinese presence in Her Majesty's Realm were the dirty footprints on toilet seats.

My prior employer had a large number of east and west African immigrants in the production area.  They did a lot of standing and squatting over the toilets.  Men and women.  They also did a lot of "washing" in the sinks.  They kept the maintenance staff busy as a result.

They were damn good workers, but definitely brought some different habits with them.

Fin de siècle witnessed Queen Victoria ruling over a third of the world's people. And nothing epitomized British cultural, technological, and scientific prowess better than Sir Thomas Crapper's most noble invention. From that moment forward, every Englishman ruled the waves from his own personal throne. But now, knowing the insidious dangers posed by a sitting evacuation, may we surmise that the End of Empire was wrought by the introduction of the Crapper Flush Toilet? Was British Imperialism washed away like so many leavings on a colonial shore? The world wonders.

As a cheap frozen pizza expert in my MU days, Palermo's pizzas were usually just a viable alternative when you got tired of Jack's and were too hungry to just eat a Roma.  The crust and sauce were fine but the toppings were poor.  Roma were surprisingly good for the lowest price option, but everything was kind of thinned out so they were smaller.

Completely horrible.  I truly wanted to like them because I was supporting a Milwaukee company, but there's a reason the grocer's freezer down here eventually remained stocked full of them after the (seemingly) bi-monthly 5/$10 sale.  To this day, the occasional late-night or weekend afternoon cardboard pizza is still a weakness of mine, but even I can't stomach Palermo's anymore.

Check out Milwaukee Pizza Company. They have greatly increased in availability during the last year and can now be found at most of the locally owned grocery stores (Outpost, Groppi's, etc). You might also be able to find them at Metro Market - no luck so far on Pick and Save. I know a bar owner who sells their pizza and he vouches that they are good guys to work with.

I grew up 6 blocks from Discount.  My old man visited every Friday when I was a kid right after grocery shopping with my mom down the street at Kohl's. I sometimes think he built our house on 57th because of the proximity.  His 7 year MU degree made him a very wise man.

That's the problem with the great frozen pizzas: distribution is local and limited.

My all-time frozen favorite is from Joe's Fox Hut in Fond du Lac... but living in IL, I can't get MPC - let alone something from Fondy - from the local food-o-rama.

There is only one correct way to make a pizza: charred, cracker-thin crust with San Marzano tomatoes and mozz di bufala in a 900 degree brick oven.  If you can't even replicate one component, then you're just not eating pizza.

But I'll still say it... Chicago-style pizza is bad.  If I wanted pizza to taste like bread, I would simply order cheese on my garlic bread and dip it in marinara.  Heck, I'd take Rocky Rococo's over Uno's, Malnati's, Giordano's, etc. three meals a day every single day of the week.  If I'm going to eat something fake, I might as well be at a place that will give me nacho cheese with my breadsticks.

Benny, Then you'd love New Haven style pizza because you just described it excatly.  The brick ovens are coal fired.

Has anyone tried Neapolitan style pizza?

My son works at a place called Punch Pizza in the Cities.  It's pizza that is cooked for 90 seconds in an extremely hot, woodfired oven.

My opinion, it is average at best.  However, I can't get over how busy this place is.  On any given weekend, there is a line out the door literally.

Filmmaker examines New Haven's pizza trinity
By Jordan Fenster, Entertainment Editor

Posted: 09/22/11, 12:00 AM EDT |

There's a story filmmaker Gorman Bechard says he heard from Rosa DeLauro. As the story goes, the congresswoman made a bet with Rahm Emanuel, when the Chicago mayor was a member of congress, that New Haven's pizza was better than pizza from Chicago.

So, DeLauro ships in a ton of pizzas from Sally's, and Emanuel sends for pizzas from his favorite spot in Chicago. They hand out the pizza, and congress actually votes on which is the best.

"Chicago only got two votes," Bechard said. And whatever his politics, Bechard agrees with that particular congressional vote. "I went to the three best pizza places in Chicago. I left there feeling pity."

It's because of stories like this, and "the passion about the pizza," Bechard said, that he decided to make a new, feature-length documentary called "Pizza: A Love Story," about New Haven's three best-known pizza joints -- Modern, Pepe's and Sally's -- and he needs your help.

There's no lack of content. Bechard has spoken to numerous local dignitaries on the subject, and he intends to speak with some high-level Yale graduates, as well.

"I want the two Clintons to talk together," he said. "I'd like to get the Bush twins."

And it might be possible. Another story: Then-president Bill Clinton and Vice President Al Gore are in New Haven, and decide they want some pizza. An aide calls up Sally's and tells the proprietor, Flo Consiglio, that the president would like to come in before the shop opens, for a slice.

As Bechard relates the story, the aide was told, "We don't open early for anybody," so Clinton went to Pepe's instead.

But despite the diplomats, world leaders and other notables who could conceivably be interviewed for the film, there's a small piece missing. Bechard said his "holy grail" is a photo of Modern, pre-1954, when it was known by a different name.

"I would kill for a photo of State Street Pizza," he said.

Bechard -- a five-time novelist and award-winning filmmaker (last week was the New Haven screening for "Color Me Obsessed," his movie about the band The Replacements) -- is adamant that New Haven's pizza is the best in the world, and that the city is known throughout the nation as the place for the best pie.

"I've had pizza everywhere," he said. "Nothing even comes close. Ten-thousand years from now, we will be remembered as the pizza capital of the universe.

"What is it that makes presidents come back to Yale? What is it that makes Steven Spielberg get pizzas from Modern?"

He even offers an explanation. "It's all about the water," he said. Oh, yeah, and the ovens.

"You can't make ovens like that any more. It's not even legal," Bechard said. "You have three ovens with 80 years of pizza crud on them."

As a novelist, Bechard knows that good stories contain an element of conflict, and "Pizza: A Love Story" -- now about a third of the way through filming -- has its share. But, if he can be believed, there's little disagreement among the trifecta.

"They all respect each other. They all have lines out the door," Bechard said. "The conflict is in the people. New Haven is polarized. Not by politics, not by religion, but by which pizza place is better."

And, before you even ask, I'll tell you -- Bechard has his preference, and he's not shy about sharing it.

"If I was on on death row, my last meal would be Sally's," he said.

If you've got a photo of Modern Apizza, or State Street Pizza as it was known, from between 1934 and 1954, send an email to pizzaalovestory@gmail.com. For more information on the film, log on to pizzaalovestory.com.

This is exactly what I was describing above.  I was actually at Punch with the family this past Friday night (Highland location)... bear in mind that most of their menu doesn't use the di bufala cheese, although it's available as an "upgrade" to any item.  I ordered a doppio funghi y salame pizza for myself, and I will admit that it did seem average compared to what I made at home a few nights prior (recently discovered that Costco carries di bufala and San Marzanos); however, I still left with a happy face and stomach.  It's the best pizza in Mpls, even when they're off.

Neo pizza may take some getting used to... the same way people have to get used to authentic Mexican cuisine after growing up with Chi-Chis and Taco Bell.

I have had pizza all over the US and Italy and nobody has the "best pizza" some are better than others and some are drech. . On occasion I like the greasy, oily New Yawk style but on others  the wood fired crispy crusted is what I have the jones for. I buy Malnatti's because it is the best frozen I have found and does have San Marzanos on it .
The worst pizza I ever had was in Nebraska where it came out with American cheese all over the top. No buffalo there I guess or at least not water buffalo.

Thanks for the insight. I always knew the CT pizza was a step or two better than what you get in NYC. What caught my eye in your article is that the New Haven pies are made in brick ovens with coal combustion. The place we go to in Stamford is The Coalhouse. As the name implies they also use coal-fired brick ovens. There is nothing fancy about the Coalhouse, even though they underwent renovation during my GE Cap days. But the pizza is phenomenal. As I said, it was always my first meal back in the States after flying in from Asia. Great, great pizza. Is it the best in the world? I think so.

You obviously haven't had St. Louis pizza with Provel Cheese. It tastes like paste. They put that $hit on everything and it's f-ing disgusting. I have to go to the Lou for work about every 6 weeks and people try and push that crap. Vomit. I rather eat Top Ramen.

As for Milwaukee I always liked Classic Slice in Bayview. Crust was crispy yet chewy and they had a wide variety of toppings. Now in Chicago I pretty much eat Piece exclusively as they do New Haven Style Pizza.

Some of the worst pizza I ever had was in Olongapo City. After a long, hard night of hammering San Miguel's we would slam into one of a number of pizza joints on Magsaysay Avenue to try and take the edge off of the next day's lager flu. The World Famous Iron Claws frequented both the Straw Hat and the Cork Room for their 0300 pizza fix. We knew the pizza was off and only then realized they didn't use cheese on the product in the Philippines. That didn't deter us going forward as we continued to patronize both restaurants.

I'll have to visit the next time I'm in Stamford.  Look's good.  That's the deal in Connecticut, there's mom & pop New Haven style pizza place like the Coalhouse in most neighborhoods.  My local one is Roseland Apizza which is 10 minutes closer than the New Haven Quinfecta.

Interesting that CT placed so many places in the list. I also looked at the Fried Chicken list and was surprised to see Seattle's Ezell's on top. Ezell's is solid but another on that list, Gus' in Memphis, is a far better meal. Like pizza you have to ration out your fried chicken dinners.

Nate,

The joke is that no one from the twin cities shops at MOA.  They have a reputation for violent crime on weekends and evenings.

Since light rail was extended to the mall, tons of juveniles take the train to hang out at the mall.  MOA has introduced some tough trespassing rules for juveniles, but it has not stemmed all of the issues out there.  They literally have a brigade of mall cops as a result of the issues associated with light rail.

Chili 83 must live in the Naperville of the Twin Cities.  I was at the mall all day Friday and early-afternoon to mid-evening on Saturday... the only violence I saw was parents forcing their kids to wear Vikings jerseys nearly seventeen weeks after they were eliminated from playoff contention.

on my last visit to the MOA I was mobbed by a gang...... of gals on a bridal party scavenger hunt. Merely because I was the first in line for the shuttle back to my hotel they surrounded me and demanded items on their list. I complied with a business card but had to disappoint them on the second item as I informed them I was not wearing any underwear. With a rousing cheer they descended on the Mall en masse. No doubt to assault more unwary tourists.

Sausage and onion for me. With the melty provel that sticks to the roof of your mouth. Smokey goodness. On the cracker thin crunchy crust.

Calling Provel a Wisconsin creation is tantamount to inventing something in Illinois (like Chicago-style "pizza"), hiring a guy from Italy to bake it, and calling it authentic Italian cuisine.

Provel was a concoction developed in St. Louis... it just happened to be contract manufactured in Wisconsin.  Nobody calls Coors a Wisconsin creation just because they brew it in Milwaukee.

That's not entirely accurate. It was a collaboration. A St. Louis grocer told a Wisconsin dairy manufacturer what they were looking for in terms of texture and taste, and the Wisconsin dairy manufactor developed it to match what they were looking for. The recipe was developed in Wisconsin.

The recipe for Coors was not developed in Milwaukee.

I complied with a business card but had to disappoint them on the second item as I informed them I was not wearing any underwear.

Chicks dig me, because... I rarely wear underwear, and when I do it's usually something unusual.

Can we agree that absent the request of the grocer in St. Louis, the dairy in Wisconsin would not have come up with Provel on its own?

Although as luck would have it, both of my tangents within this thread have now converged... the recipe - if not the inspiration - for Coors was likely developed in, of all places, Naperville.  So there you have it... Coors is apparently the beer for people who won't venture outside their suburb because there might be trouble-making juveniles there... or maybe it's because those juveniles smell like Provel.

I saw this article in Esquire that seems to mention some of the countrywide pizza places thrown out there in this thread.

San Fran's Patxi's is known for their Chicago style deep dish (or whatever you want to call it)!

Sadly, SF and much of the west coast can't claim any style of pizza.
If you want to credit them with ANYTHING, you may have to go flatbread with non-traditional toppings...think salads on breads, seafoods on bread, etc. Think: ENTREE on pizza.

If anyone else misses my favorite pizza in Milwaukee - Mama DeMarinis - they will be opening again in Bay View soon on KK under the name Little DeMarinis.  Can't wait.

Here's a recent example.

Three great pizza place to visit in the Northland...

Red's Savoy Pizza.  Go to the original on E. 7th in St Paul.  Try the sauerkraut and sausage pizza.  Seriously, and surprisingly good.

Another good place ...unique taste to their thin crust. Carbone's Pizza.
