I think you have to take the three there. Worst case scenario, Seattle scores a TD on their next drive and it's still a one possession game.

If their drive is long enough to score a TD on the next drive, the drive is probably long enough to get 0:00 on the scoreboard. I definitely go for it there.

Huge 3rd down completion to Kupp but Darnold def got away with one. Threw it behind Kupp who made a nice catch but if the DB had even put his arm up, easy break up

This is exactly why the Rams DO go for the touchdown. Kick a field goal and you still trail and there's no guarantee you're getting the ball back.

McVay didn't go for 2 when it was a 5 point game, then didn't understand (for some odd reason) that you can't call a timeout and then challenge a play (you can't use back to back timeouts).

This is basic stuff a head coach needs to be better at.
