Dish Network

I have dish network so if I get the SportsNet New York channel (SNY) will I get most MU games? I have heard that the SNY channel also serves as the Big East network channel, is that true? I don't want to have to get the ESPN package because I think it is too expensive.

Yup, I had SNY through Dish last year and got the majority of the games.  The others you can stream through various channels.

are most of the games that are shown live, or are they tape delayed the next day or a few days later?

As I recall...most if not all were live.
