Who's Got a Good Mardi Gras Recipe (food)?

After several years of making a chili cheese crawfish étouffée on Fat Tuesday (the guys in Naptown know what I'm talking about), I've decided to mix things up this year and whip up something different, but I need some suggestions.

Heck, it doesn't necessarily have to be cajun/créole... I'm especially interested in what kind of traditional meals our French and Acadian Scoopers are cooking up this time of year.
Wow, I'm very concerned for Benny.  Being able to mimic Myron Medcalf's writing so closely implies an oncoming case of dementia.

Last night I made some zatarain's red beans and rice with pork chops.  Yum  A little Voodo Lager and

No.  Sadly, the only crawfish around here is frozen and comes from China... I've used langostinos most recently, but those too, frozen and Asian.

That article is hilarious. For what it's worth I think Bourdain is correct in saying her recipes are ridiculous. She lacks finesse and subtlety in her cooking - genuine hallmarks of inspired cuisine.

How she ever became an icon is beyond me. Bourdain said that her food is "f#cking bad for you" and that "it sucks." I think he is being generous, frankly.

I don't give a s#it about somebody else's opinion of her, or really any of her other recipes. Make the f'in gumbo and then tell me what you think.
