I don't understand the concept of a sh1t eating grin. I mean, no one would want to do that, and if you did, your grin would be completely different than when people describe a sh1t-eating-grin.

According to the Oxford English Dictionary, this phrase first appeared in the 1950s.No one knows for sure where it came from, but there are two origin theories. The current "it's just common sense"/dog theory says that it comes from the very self-satisfied look animals (like dogs and possums) get when they eat feces. The historical theory says that it dates back to Ancient Rome, with folks like Livy describing the debaucherous, demented grins of coprophages (e.g., see: The Priapeia )
Pretty sure it refers to someone smiling while eating a Red Delicious.
It would take incredible willpower to turn that look into a grin.
