I wonder how much is actually "Waygu" and how much is the crossbred Waygu strains that aren't actually Waygu.

Same as places calling items "Kobe beef" when Kobe beef is only grown/raised/exported from Japan and certainly isn't being served at any mass market price

I'm not sure but I know American Wagyu is not the same as Japanese Wagyu.  Whatever the  cut they have in Tuscany would be my preference over all steaks.  It's some sort of Florentine ribeye with great marble and ample thickness.  It's a serious steak but not a con or insanely expensive.

I think the best steak I've ever had was in Siena .  But yes, it was gargantuan and it was split among three people.  Good effort Hards to take that down.

I think there are  under 10 restaurants in the US that are certified to sell authentic Kobe beef.

I had an ounce of japanese and an ounce of us.

Had it at the SW Steakhouse at the Wynn. $600 for an 8 oz ribeye (for the table of 4). I didn't pay for it.

But if there is no legal definition of Waygu, then I guess it is buyer beware. Maybe they just grind in some left over fat trimmings, name some cows Waygu and call it Waygu steak.
