My personal favorite "basic" recipe":

Muenster and Cheddar, bacon, and grilled onions on multi-grain bread.  Use Land-o-Lakes Light Butter to grill (it spreads easier).
Have some patience, FFS.

My favorite grilled cheese includes 8-year aged Cedar Grove cheddar, with a spread of cottage cheese mixed with diced olives and pimentos on brioche. Need to do it on a low heat because the aged cheddar takes longer to melt.

Usually not a dunker though.  Some of my go to ingredients:

Squash & pepperjack

Mozzarella, tomato, and basil

Avocado and/or tomato & pretty much any cheese

Also, if you add meat it is no longer a grilled cheese.  It is a meat sandwich with cheese.

Personally, I think grilled cheese should have its own equivalent of the Reinheitsgebot.  Bread, cheese, 1 spread, 1 additional ingredient.  Anything beyond that is just a "hot sandwich."

I'll concede bacon since it doesn't usually get top billing.

Roast beef and cheddar, for example, I would never call  a "grilled cheese."

Bacon, especially crumbled bacon, would have to be an exception. I'd argue that flaked crab or lobster would fall in that category as well.

Never heard of Mayo or ketchup on a grilled cheese....

adding Sriracha sauce to regular ranch dressing makes for a great salad dressing.

This is exactly what was on my salad for lunch (romaine, couscous, tomato, avocado, and smoked salmon) - awesome combo

As for grilled cheeses (i'm not sure where the line between a grilled cheese and panini is).....either prosciutto, smoked mozzarella, and pesto or chicken sausage, pepper jack and Dave's 'Devils Spit' pickles

Did some research via Google.  Several articles state that a grilled cheese is bread, cheese, and up to one spread.  Add anything else and it is a "melt."

One article even said all grilled cheese sandwiches are melts but not all melts are grilled cheese sandwiches.

So I've been making melts this whole time and calling them grilled cheese.
